Nyetimber Classic Cuvee is produced by the traditional method from the classic varieties: Chardonnay, Pinot Noir and Pinot Meunier. Body and fruitiness from the Pinots and the elegance and finesse of Chardonnay combine to provide the necessary elements for the creation of an exceptional sparkling wine.

Recorded in the Domesday Book in 1086, Nyetimber Manor lies in a sheltered valley surrounded by gentle south facing slopes. In the 12th century the monks of Lewes Priory found the unique microclimate to be ideal for vine growing. Later the property formed part of Henry VIII's grant to Anne of Cleves. In creating the wine, meticulous care and only the strictest production techniques are used. After bottle fermentation the wine continues to mature on its lees for typically 5 years thus developing balance and complexity of character, creamy rich aromas and delicate lively bubbles.
Nyetimber has consistently been awarded the highest international accolades for its wines.

Storage

Sparkling wines and Champagne should always be stored in a cool and dry place away from light and heat sources. The ideal temperature for storage is 13-15 degrees C.

Warning: Sparkling wines contain high natural pressure. Do not allow bottles to get warm. Chill bottle before opening and avoid shaking. Point bottle away from others and yourself when removing wire, hood and cork. Hold the cork firmly and twist out slowly by hand. Never in any circumstances use a corkscrew to open.

The Nyetimber estate has a number of landmarks in its history. Its earliest beginnings saw it recorded in the Domesday Book in 1086. Then there was the planting of the first vines, almost 900years later. For 30years Nyetimber has had a single aim: to make the finest English sparkling wine to rival the best in the world, including Champagne. A true pioneer, Nyetimber was the first to craft English sparkling wines exclusively from the three celebrated grape varieties: Pinot Noir, Pinot Meunier & Chardonnay

Regional information

Nyetimber owns one hundred percent of our vineyards and all of our wines are produced from the 220 hectares we have planted at the best sites in West Sussex, Hampshire and Kent. Each Vineyard was deliberately selected to be south-facing with either sandy or chalk soils. All are located in sheltered positions affording them protection from the coastal winds. Prior to harvest, the grapes are tasted to ensure the best flavour development before picking and every grape is picked by hand at the optimal time.

Pale gold. Gentle, fine bubbles. Toasty, spicy & complex aromas developed from extended ageing in our cellar (average 36 months). The palate -equally complex with honey, almond, pastry & baked apple. Fine & elegant, combining intensity, delicacy & length.

Vinification details

Each vineyard parcel is treated uniquely, from picking to gently pressing to vinification in separate tanks. Such attention to detail allows for a wonderful diversity of base wines when blending decisions are made in the spring following the harvest. All wines are crafted according to the strict rules of the traditional method, aged for extended periods of time on the lees and given sufficient post-disgorgement time before release.
