Garlic Butter Baby Mushrooms
Prep time: 10 mins
Cook time: 15 mins
Serves: 2

Caramelised shallot and garlic are the perfect match to golden baby mushrooms. We serve our garlic butter baby mushrooms sprinkled with fresh chives and toast on the side for dipping into the buttery juices, but you could also serve them on ricotta toast for a more substantial breakfast or brunch.

Ingredients:
1 tbsp olive oil
2 shallots, finely sliced
2 fat garlic cloves, grated
300g baby mushrooms, trimmed and scrubbed
25g butter
1 tbsp chopped chives

Method
Step 1
Heat the oil in a frying pan over a medium heat. Add the shallots and gently fry until translucent and softened.

Step 2
Add the garlic and fry for 2-3 mins more until cooked through and fragrant.

Step 3
Increase the heat slightly and tip in the mushrooms. Fry for 5 mins until just softened and golden.

Step 4
Add the butter and stir until melted and everything is golden and coated in garlic sauce.

Step 5
Serve sprinkled with chopped chives and toast for dipping.
