Our Red Tractor-certified British boneless pork shoulder joint has a rich, savoury flavour compared to leaner cuts like pork loin which are milder in flavour. The joint is specially butchered and tied, making it ideal for braising, slow and low roasting or barbecuing. When cooked well, the meat becomes incredibly tender and juicy, and is easily pulled apart, ideal for dishes using 'pulled pork' such as sandwiches, tacos, sliders or as a pizza topping.

While delicious on its own, it pairs perfectly with honey and garlic, maple and Dijon and pineapple and ginger. Hoisin, teriyaki, BBQ and herbs like rosemary, thyme and sage all compliment pork's natural flavour. Serve it with your favourite veg and a sauce drizzled on top.

Suitable for freezing. Freeze by date mark shown and use within 1 month. Defrost thoroughly before use. Do not refreeze once defrosted and consume within 1 day.

Cooking guidelines

Remove all packaging. Wash hands, all surfaces and utensils after touching raw meat. Keep raw meat separate from cooked foods.

Oven:

Before cooking: Preheat oven to 240ºC / Fan 220ºC / Gas 9. Place the joint on a chopping board. Rub the rind dry with kitchen roll and cover with 2 tablespoons of salt, working into the cuts. Leave at room temperature for 30 mins. Rub all the salt off the joint and from between the cuts. Pat dry, lightly cover the rind with 1 teaspoon of salt. Cook for 30 minutes. After 30 mins, reduce the temperature to 180ºC / Fan 160ºC / Gas 4 and cook for 30 mins per 500g. Check food is piping hot and juices run clear. Allow the joint to rest for 15 minutes before carving. Do not reheat.

Pulled Pork:

Preheat oven to 180ºC / Fan 160ºC / Gas 4. Remove all packaging. Place shoulder joint into an ovenproof dish with 500ml of water and cover tightly with foil. Place on the middle shelf of the oven to cook for 3 hours. Rest for 15 mins and remove string and rind before shredding the joint apart using 2 forks.
