Ocado Bramley Cooking Apples.
Bramleys are large, flat apples and are usually green in appearance, although sometimes they feature red speckles. They are intensely tart, much more so than most eating apples, and have a sharp, acidic flavour that can be quite puckering. Underneath the tartness, there is a subtle, classic apple flavour. Compared to other apples, Bramleys have a relatively low sugar content, which contributes to their tartness.
The flesh is firm and dense, which helps them to hold their shape during cooking, but despite their firmness, Bramleys are also quite juicy. They're the perfect star of the show in apple pies, crumbles, sauces, chutney and purees.

Apple and Pear Crumble

Ingredients:
45g of plain flour
45g of wholemeal flour
120g of butter, cold and cut into small pieces, plus extra for the baking dish
45g of rolled oats
75g of muscavado sugar
75g of pecan nuts, roughly chopped
500g of cooking apples, cored and cut into bite-sized pieces (approx. 2cm)
400g of conference pears, cut into bite-sized pieces (approx. 3cm) 0.5 lemon, juiced
3tsp of caster sugar
2cm of piece of ginger, grated or minced
50g of sultanas
1tsp of ground cinnamon
1tsp of vanilla extract
0.5 cup of vanilla ice cream or custard
Method
Step 1
Preheat the oven to 190°C/170°C fan/gas mark 5 and grease a rectangular baking dish with butter. In a medium bowl, add the flours, butter, oats and sugar. Using your fingertips, lightly rub the butter into the dry ingredients until a coarse breadcrumb texture is achieved. You could also pulse these ingredients together in a food processor if you have one, but be careful not to over-mix as you will lose the texture of the oats. Mix in the chopped pecan nuts then set aside.
Step 2
In a separate bowl, toss the apples, pears, lemon juice, caster sugar, ginger, sultanas, cinnamon and vanilla extract until well combined. Transfer to the greased baking dish, then scatter over the crumble topping.
Step 3
Bake the crumble in the oven for 50-55 mins. Check on the crumble after 30 mins and if the topping is already deeply golden brown, cover the crumble with tin foil for the remaining baking time.
Step 4
Leave the finished crumble to stand for 5-10 mins before serving with vanilla ice cream or custard.
