Typically heart-shaped or conical, these strawberries are a bright, glossy red colour when ripe, and have a green leafy top. With a distinctive, fragrant aroma and a balance of intense sweetness and acidity, their juiciness provides a burst of flavour in every bite.

Over the Rainbow Yoghurt Lollipops

Ingredients:
1 handful of strawberries or raspberries, cut into small pieces
1 handful of pomegranate seeds
1 handful of kiwi, cut into small pieces
1 handful of pineapple, mango or satsuma, cut into small pieces
1 handful of blueberries
8 tbsp of thick kefir yoghurt or greek yoghurt
1 handful of purple grapes, halved
Method
Step 1
Spread the yoghurt into four circles, about 5mm thick (2 tbsp for each circle) on a large baking tray lined with baking paper. You can use two smaller trays if necessary, just make sure they fit your freezer.
Step 2
Arrange the fruit in rainbow lines, sticking to the colour order of purple, blue, green, yellow, orange then red.
Step 3
Place the top of a cake pop stick (see Tip) into the yoghurt and freeze overnight (or for at least 4 hours).
Step 4
Remove from the freezer and allow to sit for 5-10 mins before carefully lifting off the baking paper and enjoy nibbling the cold, colourful rainbow.
