Caprese Salad

This super simple yet impressive-looking caprese salad is the perfect salad for any occasion. It’s made with juicy ripe tomatoes, fresh basil and creamy mozzarella, and seasoned simply with salt and pepper to bring out the natural flavours of these delicious ingredients. Caprese is a traditional Italian salad best served with warm crusty bread, a platter of prosciutto and salumi and a bottle of chilled prosecco.
Ingredients:
6 salad tomatoes, sliced into ½ cm slices
1 tsp sea salt
250g mozzarella, sliced into ½ cm slices
25g basil leaves
½ tsp coarsely ground black pepper
1 tbsp olive oil
1 tbsp balsamic vinegar
Method
Step 1
Lay all of the tomato slices on a large plate or chopping board, season with the sea salt and leave for 10 mins to absorb.
Step 2
On a serving platter, layer a tomato slice, followed by a slice of mozzarella and repeat this sequence until you have used all of the tomato and mozzarella slices.
Step 3
Pick the leaves from your bunch of basil and tuck them between the mozzarella and tomato slices randomly. Season with the pepper and drizzle the olive oil all over, followed by a splash of balsamic vinegar.
