These bananas have a firm, pale yellow flesh and vary in size and shape. A medium banana (80g) is 1 of your 5 a day and their flavour is dependent on where they are in the ripening process;
- Green bananas have a more bitter flavour and grow sweeter as they ripen.
- Yellow bananas have a mild, sweet flavour and are ideal for slicing over porridge, cereal and pancakes or, eaten as a healthy snack.
- Browning bananas have a stronger smell, more intense ‘perfumed’ taste, softer texture and are perfect for blending into smoothies, muffins and cakes or freezing as an alternative to ice cream.

Hot Cross Bun French Toast

Serves: 4
Ingredients:
2 eggs
100 ml of milk
2 tbsp of caster sugar
1 knob of butter
4 hot cross buns, halved
4 tbsp of greek yoghurt
2 bananas
4 tbsp of honey
Method
Step 1
Crack the eggs into a bowl. Then add the milk, caster sugar and cinnamon. Beat with a fork until you have a totally combined mixture.
Step 2
Pop a knob of butter in a large frying pan and heat it over a medium-high heat. Dip the hot cross buns in the egg mixture, turning so that all sides are coated.
Step 3
Place the hot cross buns in the frying pan a few at a time, frying for 2 mins on each side until golden. Serve with a dollop of Greek yoghurt, chopped banana and a drizzle of honey.
