Kit contains: 8 gluten free tortillas, 1 gluten free cooking sauce, 1 gluten free creamy topping sauce
Ready in 25 mins. Serves 4 amigos.
Just add: 500g chicken, 150g corn kernels, 1 red onion, 150g grated mozzarella
Ideal for dinner with friends and family; easy to prepare and delicious!

500g Chicken, chopped
150g Corn kernels
1 Red onion, chopped
150g mozzarella, grated
Gluten Free Enchiladas
1 Preheat the oven to 180°C (160°C fan-assisted ovens). Heat a little oil in a large frying pan and brown the chicken over high heat for 4 minutes or until thoroughly cooked. Add the onion & cook for a further 3 minutes. Add the cooking sauce, the corn kernels and 80mL of hot water to the chicken, bring to a boil and simmer for 4 minutes. Remove from the heat and stir in half of the cheese.
2 Warm the tortillas
Microwave: pierce the pack and place it in the microwave. Heat for 35 seconds on full power (800 watts)*. Open the pack, separate the tortillas and keep them covered until ready to serve. *Time may vary depending on microwave wattage
3 Place a large spoonful of the chicken mixture onto the centre of each tortilla, add a drizzle of creamy sauce, roll and place in a greased ovenproof dish. Spread the remaining creamy topping sauce over the top of the enchiladas and sprinkle with the remaining cheese.
Bake for 10 minutes, or until cheese is golden. Serve and enjoy!
Top tip

Gluten free
From someone who has to eat Gluten Free this cooked properly is brilliant, even my Husband who doesn't have to eat GF thought it was good, I think it is how you cook it, definitely buy again.
Okay
These are just okay, not really like authentic Enchilada's and a little soggy when they came out of the oven. Disappointing.
awful chemical taste
I bought this as the normal enchilada kit was out of stock so thought I'd give this a go. This is actually horrible, we couldn't finish it. The wraps are sloppy and fall apart, the cheese sauce is weird and altogether it tasted very chemically left a horrible aftertaste. I've requested my money back on this as most of it went in the bin.
Inedible
I had bought this brand before and decided to try the gluten free version for my son. All four members of my family looked at the insipid dish, had a bite and threw their meal in the bin. The smell is awful, the white sauce revolting and the wraps disintegrated.
okay overall
Good sauce but not nearly enough of the enchilada sauce. I added some other sauce I had open already and still not as much as usual and then does become quite cheesy/heavy which okay its enchilada but still didnt sit great with us. Gf tortillas okay they seem slightly different to the ones in fajita kits which I think are better, these did tear a little although once baked didnt matter. Would probably just buy tortillas and make a sauce myself next time.
Really nice burrito kit
I was given this product free to review. We used the kid in the weekend as one of our friends is coeliac. Everyone was surprised as they tasted better then the original ones, nice gluten-free wraps. Lovely soft texture, easy to fold and the salsa, and cheese sauce also tested really good .We will be buying this wraps again . But something to keep in mind is that they're smaller then the normal version so a bit pricey.
