Preparation and Usage
Our fresh, free range cockerel makes a fabulous and great tasting centre piece for your Christmas table. Each cockerel is given time to mature slowly and naturally on our family farm in rural Staffordshire. This allows for a beautiful depth of flavour to develop alongside moist, succulent, tender meat. Demand for our fabulous birds grows every year.
Award winning, with a fantastic 2-star in the Great Taste Awards – these free range cockerels are sure to make your Christmas dinner just perfect.
Cook from chilled. Remove from fridge and allow a little time for your bird to come to room temperature before cooking, ensuring all packaging removed.
Preheat oven: 190°C / Fan 170°C / Gas Mark 5. Calculate cooking time based on 12-15 minutes per 450g.
Smear a little butter over the bird, season with salt and pepper and cover the breast with streaky bacon. Put in a roasting tin and cover the top with foil.
Apx 40 minutes before the end of cooking time, remove the foil, discard the bacon, drain any excess fat (reserve this to make a tasty gravy), return to the oven and finish cooking to crisp up the skin.
To test the cockerel is cooked, insert a skewer into the thickest part of the thigh - the juices should run clear. If they are pink, return to the oven for a further 10-15 minutes and re-test.
When cooked, remove from the oven, place on a warm platter, loosely cover with foil and rest for up to 20 minutes before carving.
Cooking guidelines
2) Season, to your liking.
3) preheat oven to 190 degrees
4) Place in baking tin, cover with foil
5) Place in the oven and cook for 12-15 minutes for 450g, so for a 3.7kg cockerel 2 hours and 5 minutes
6) 40 minutes before the end of cooking remove the foil.
7) Push skewer into thickest part of the thigh to make sure it is done.The juices must run clear.
8) If the juices are not clear place int he oven for another 15 minutes, repeat this until the juices are running clear
9) Once cooked, remove the cockerel and place on a warm platter
10) Let it rest for 20 minutes before carving. ENJOY!
