ABOUT THE DISH
Imagine yourself lounging in the long, luxurious shadows of the Italian afternoon sun, enveloped on all sides by the deep azure of the Ligurian sea. You’re on the Italian Riviera, in the town of Recco, to be precise. While many famous culinary staples can be traced back to this region, perhaps there is none more firmly established in the pantheon of Italian gastronomy than the humble focaccia bread. Italian food traditions dictate that this bread is made with water, flour, and oil but many now also scatter its surface with fresh herbs, garlic, or even onion.
We maintain that the best accompaniment to almost any meal is a warm focaccia alla genovese, or Genoese focaccia, which is sometimes topped, as here, with a generous handful of sun-drenched tomatoes. A traditionally thin crust, soft dough to soak up every drop of pure, Italian olive oil and a crisp bite to finish. A truly miraculous concoction that we can’t wait for you to enjoy.

I am Italian, grew up in Italy and used to take focaccia to school as a mid-morning snack almost every day - fresh from the panetteria downstairs. This is absolutely NOT focaccia as it should be! You should be able to easily cut it in half horizontally to make a 'focaccia farcita' (stuffed focaccia). This is far too thin and falls apart in a mass of crumbly bits. Good, real focaccia is less dense, but holds together well. The dough here is all wrong! It's soft and squidgy.... No, no, no: absolutely not authentic and very disappointing. Will probably be liked by people who favour soft white supermarket sliced bread.
Absolutely lovely to look at, a feast for the eyes before a feast for the belly. So definitely would be buying this again as the taste was so authentic.
The crust on this crisped up nicely in the oven, but it remained soft and doughy in the middle. I did sprinkle a little bit of cheese on top, as I thought it might be lacking on its own, but can imagine it working well with pasta or as an open sandwich.
soft and tasty
this was delicious, soft and tasty. the tomatoes helped it stay slightly moist and not dry. drizzled a balsamic glaze on top- perfection!
Excellent focaccia, soft with a crunchy thin crust. Not too chewy, not too dry, not too salty. Its just as its supposed to be. I cut it and heated it in a covered non stick pan on the hob for a few minutes and it was perfect. Now Im waiting for the plain rosemary version!
Tasty bread full of tomato flavours
Delicious warmed in the oven, soft tasty bread with a slightly crispy crust full of the flavours of tomatoes, salt and rosemary. We ate this with homemade soup and some cheese. Perfect.
