Product Information
Paxton & Whitfield Beauvale is made by Cropwell Bishop in Nottinghamshire. Cropwell Bishop are famous for being one of only four Stilton producers. They are a family run creamery who have been producing award winning cheese for more than three generations. Today the creamery is ran by Robin Skailles who alongside Howard Lucas developed Beauvale.
Beauvale was launched in 2011 and is a soft and mellow blue cheese. Produced using locally sourced milk, the curd is hand ladled from the vat into moulds before maturing for seven weeks, during which time the cheese is turned by hand, developing the thin and edible rind.
Beauvale is rich and creamy, and almost spreadable in texture. The flavour is mellow whilst being perfectly complimented by the subtle piquancy from the blue veins. A delicious British take on a more European style blue cheese.
