Paxton & Whitfield's Cave Aged Cheddar is handmade to a traditional recipe using cows' milk from local herds to give a fruity flavour and smooth texture. It is matured in the historic Wookey Hole Caves of Wells, Somerset, where the flavour picks up a distinctive complexity from the unique environment.
Paxton's Cave Aged Cheddar is distinctively fruity, with a nutty bite. It has underlying earthy notes and a dense consistency that is satisfying in the mouth.
This is a specialist cheese which is made to exacting specifications regarding geography, milk source and recipe, earning it a coveted Protected Designation of Origin (PDO).

Fab rich proper cheddar
I love strong non rubbery cheddar and this didnt disappoint! Its rich flavour and great texture makes you keep going back for more. My top cheddar now. I put ten cheeses in a cheeseboard for an Easter party and everyone commented on this cheddar and they ate the lot in minutes! Highly recommended its so good to gave a decent cheddar back and n the shop list.
Bland
Brought this to go on the cheese board. I was hoping for a mature cheddar. It was tasteless. Packaging was annoying
Great tasting cheddar
This was a really tasty cheddar cheese. A good balanced flavour, not overly strong and with a lovely texture. Went very well on a cheeseboard with some nice crisp crackers. It is more expensive but I felt the taste and texture justified this.
preferred cheddar for a cheeseboard
If youre looking for a cheddar to serve as part of a cheeseboard then this is the one. This is a cave aged cheddar that tastes like good cheddar used to. Its dry with great depth of flavour. If youre looking to sprinkle cheddar on top of something, melt or put in a sandwich I recommend you buy a cheaper mature. Otherwise, this is definitely worth the extra.
OK but expensive
I found the cheese ok but not strong enough. The packaging was rather irritating. The cheese was vacuumed packed with a pice of waxed paper wrapped round it and the only way to get it off was to take a knife to it. I wont be buying again. I prefer the David-stow cheeses as they have more flavour.
nice cheese with a slight bite
fairly strong, more so by the rind. slight crunch but not overpowering. personally I did not like the packaging. the paper outer wrapper fell apart as got a little wet. the plastic underneath is probably worse than a plastic of a regular brand everyday Cheddar in that its thick and very oversized. bought on flash sale. I would by again but only when it's on a good value offer.
