Produced exclusively for Paxton & Whitfield, this luxurious cheese is the collaboration of Cornish Cheesemakers and our cheesemongers.
Handmade on the edge of Bodmin Moor using exceptionally rich Cornish cream, this decedent soft cheese is excellent example of a British Triple Cream brie. The cheese is produced using rich whole milk and luscious Cornish cream before being left to mature and form the delicate white rind.
Triple cream cheese is a style of soft cheese that contains a much higher butterfat content than a typical soft cheese, giving it an exceptionally smooth and creamy texture. This is achieved by adding extra cream to the milk during production.
When ripe the cheese will have a slightly chalky, and fresh core surrounded by a luxurious and smooth breakdown, this core provides balance and acidity to the overall flavour.
