Preparation and Usage
Recipe
Kale and pea pesto pasta
A delicious veggie pasta the whole family can enjoy!
Ingredients:
60g Frozen peas
100g Piccolo mini penne
100g Kale or spinach
60g Fresh basil
40g Grated parmesan
1 Garlic clove
50ml Olive oil
1 tbsp Full fat Greek yoghurt
Method:
Cook the peas in a large pan of boiling water. Once cooked drain, reserving the cooking water. Bring the pea cooking water to boil, add the pasta and cook according to the packet instructions.
While the pasta is cooking, add all the remaining ingredients to a blender. If it needs more liquid, add a glug more of olive oil.
Once the pasta is cooked, drain and mix with the pesto and peas.
How to cook: 5 mins
1. Bring 500 ml of water to boil in a saucepan.
2. Pour 2-3 tbsp* of mini penne into the boiling water.
3. Cook for 5 mins, depending on the desired consistency.
4. Drain and season the pasta.
With broth
1. Bring 200/250 ml of water or broth to boil in a small saucepan.
2. Pour 2 tbsp* of mini penne into the boiling water or broth.
3. Cook for 5 minutes depending on the desired consistency.
Serving size: 2 tbsp baby pasta = approx 24g*
*Quantities are always approximate and may vary upon Paediatrician's advice depending on age and appetite of the child.
