History
La Cantina Pizzolato has been an organic estate since 1991. Winemaker Settimo Pizzolato is the latest of five generations of Pizzolati who have made wine in this scenic part of north eastern Italy. With 50 hectares of his own and contracts for grapes from another 50 belonging to long-term neighbouring organic growers, Settimo runs a significant operation which is improving in quality and focus exponentially.

Regional information
The estate benefits from the Veneto region's plentiful rainfall (average of 1200-1400mm annually) and a continental climate with cold winters and warm, humid summers. The vines are planted on pebbly soil which allows good drainage. The vineyard is farmed organically and grapes are hand harvested and carefully selected.
Tasting notes
A crisp and fresh style of rosé made from Pinot Grigio grapes. Hints of wildflowers and strawberry on the nose lead to a refreshing palate with mouthwatering minerality.

Vinification details
After destemming, the grapes are left in contact with the skins for 12 hours. This maceration gives the classic coppery colour. A soft pressing of the grapes is then carried out. Fermentation takes place at a controlled temperature in thermo-conditioned steel tanks. The wine remains in contact with the yeasts for at least 6 months.
