The nose immediately plunges you into a workd of ripe red fruits, wrapped in aromas of rose petals. The palate revealsa silky, full-bodied texture offering flavours of strawberry, sour cherries, rhubarb and gooseberry. Winegrowing started with a mild winter and a few cold spells during December and January. Rainfall from November and snow in Janurary helped to replenish the soils water reserve.Some frosty mornings mid-Feburary to late March. Spring was cool and wet wtih April frosts, turned in to warmer weather May-June. Flowering occurred on 18th June. The vines where hit with two heat waves during the summer, with rainfall in August restarting the ripening process. The bunches were healthy and of lovely quality ready for harvest between 10-24 September.

| Once harvested the grapes are gently pressed, the must undergoes two settling proecsses, one in the press house immediately after precessing and a second, which is a 24 hour cold settling in the VAT room. A low-temperature alcoholic fermentation then takes place in a temperateure controlled stainless stell vat. Each vartiety and Cru is kep seperate until final blending. The wine undergoes a malolactic fermentation and ageing takes place in the cool dark cellars 33 metres below ground, which is where each bottle undergoes a traditional riddling by hand before disgorgement and dosage. The wine then rests for six months before being shipped. |
