Grapes are gently pressed in a pneumatic press and solids are separated naturally from the juice, then primary fermentation occurs. Selected yeasts are added to the juice in temperature controlled stainless-steel tanks, not exceeding 18°C for around 8-10 days, and the wine is racked into smaller tanks. The secondary fermentation is started by a specific yeast in closed stainless-steel tanks. The temperature is kept at 14°C to encourage a slow gentle fermentation to ensure freshness and purity of fruit.
