A blend of the indigenous Sicilian white grape, Cataratto, with the better known Pinot Grigio. Both grapes are grown organically. This wine is a perfect expression of Sicily. Fresh, floral and citrussy characters produce a wine with full flavour, structure and a well-rounded finish.

Regional information
Conditions for growing vines simply could not be better: the hot Sicilian sun, the cool sea breezes that mitigate the heat, and the fertile soil rich in minerals and nutrients. The Terra Rossa soils consist of a light red, sandy loam layer on a limestone base, which is good at retaining water. These factors all combine to bring the grapes to the perfect levels of ripeness and concentration.

Vinification details
All grapes are hand-picked. Pinot Grigio, for best results, is picked very early - in the first half of August. The Catarratto, on the other hand, is picked in the second half of September. The grapes are very gently pressed after de-stemming and vinification takes place in stainless steel tanks at a controlled temperature. The two wines are blended together following fermentation and left on the fine lees for about 3-4 months to add texture.
