History
When Eric de Rothschild visited Aussières in 1999 he was immediately charmed by this place of untamed beauty, with amazing soul and history. The 170 hectares at the centre of the estate had been used to grow grapes for the better part of the last 2000 years. Over the past 20 years, tremendous work and investments have been engaged in both the vineyard and the winery, and Aussières is now recognized as one of the spearheads of Languedoc's renewal.

Regional information
The estate is nestled in the rugged hills just behind the Mediterranean coastline of Narbonne, in the South of France.
The soils are very shallow; rocky on the slopes and deeper & sandy on the plain. Yields are voluntarily kept very low in order to preserve the vines and foster the production of high quality grapes.

Tasting notes
Pretty pale pink colour with glints of raspberry. Fresh nose with notes of white-fleshed fruit. The palate presents good acidity, with plenty of volume and a lovely long, elegant finish
