Selected by the team at Waddesdon Manor, this Pinot Noir is sourced from a chalky hillside vineyard in one of the cooler areas of the Languedoc, ideally suited to producing elegant and expressive wines. Partial ageing in French oak adds complexity, texture and subtle spice, enhancing the purity of the fruit. Refined and approachable, it is a sophisticated expression of southern French Pinot Noir.

Chalky soil with fragmentation of marl from the Oligocene period. Vineyard situated in the Aude region near Limoux.

Delicate aromas of black cherry, raspberry and wild strawberry are complemented by subtle notes of sweet spice and gentle oak. Silky and well-balanced on the palate, with bright red fruit flavours, fine tannins and a touch of savoury complexity. The finish is smooth, fresh and persistent. We recommend to drink with roast poultry, duck breast or mushroom dishes.

Medium bodied red wine

Manually harvested with integral de-stemming. After a short cold maceration (5 days at 10°C) the juice undergoes thermoregulated fermentation at 25°C maximum. Slow extraction via unballasting and punching the cap. After a low pneumatic pressure, fermentation takes place in Stainless steel vats. 80% of the wine is then matured in tank and 20% in oak barrels for a minimum of 3 months.
