Fig & Goat's Cheese Tarts
Easy Recipe, Serves 6

Ingredients:
300g puff pastry (ready rolled)
6 x ripe and fresh figs, cut into 8th's
200g goat's cheese, cut into 6 pieces
Olive oil for brushing
6 tsp Rowse Greek Honey

Method:
Preheat oven to 200°C/180°C fan / gas 6 / 400°F. Roll your pastry, (if you are rolling yourself, roll until about 5mm thin) and cut into 6 rectangle shapes. On each rectangle get a sharp knife and draw a smaller rectangle on the inside, as if you are making a frame. This helps the pastry puff up and makes a border for your tarts.
Brush each piece of pastry with olive oil and sprinkle a little salt over each one. Pop a few chunks of goat's cheese in each tart on the inside of the border you made, followed by your fig pieces.
Brush a little olive oil over the figs followed by a good drizzle (about 1tsp) of honey.
Place in your preheated oven for 12-15 minutes, until the pastry is golden and crisp around the edges, the cheese is melted and the figs have caramelised.
So easy and so good!
