Made from two of Sicily's finest grapes, Frappato and Nero d'Avola, Cerasuolo di Vittoria is honoured as the island's only DOCG wine and we at Santa Tresa were one of the first two estates to produce it back in 1950. Santa Tresa Cerasuolo di Vittoria is an elegant, velvety red, perfect with pasta or cured meats.

At Santa Tresa we don’t use pesticides! Not even organic. We only use very limited amount of Sulphur and Copper in the vineyard. Instead of manure (these are vegan wines after all!) we fertilise their vines using Favino that is fava bean that we grow ourselves and is extremely effective. We use a whole host of methods to combat diseases, like sexual confusion to treat the Tignola moth, and a variety of Bacillus that is a natural defence against several diseases like moths and mildew.

Regional information
The soil is famous for its red colour ("terra rossa" soil) deriving from its iron reachnesse. The topsoil is one meter deep, sitting on limestone over a mixture of the other rocks. The predominant climate is hot and dry which results in characteristically robust and powerful wines.
Tasting notes
Ruby red colour, with violet flecks. On the nose, there are notes of morello cherries and caramel. The palate is mouth-filling, with excellent structure, soft tannins and a long finish

Vinification details
The two grape varieties are vinified separately. The grapes are destemmed, but not crushed. Selected yeasts are added and fermentation takes place at 24-26°C. When fermentation is complete, maceration on the skins is then limited to avoid extraction of bitter tannins, ultimately resulting in a fresh, lively, fruity wine. After the malolactic fermentation is complete, the two wines are blended together.
