Just add:
1 Tbs oil
500g Boneless, skinless chicken thighs or breasts, diced
400g Tin coconut milk
1 Small aubergine, sliced and quartered
1 Red bell pepper, cut into chunks
100ml Water
3 Easy Cooking Steps:
1. Heat the oil and fry the chicken for 5 minutes
2. Add the coconut milk, aubergine, red bell pepper, water and seasoning and bring to the boil.
3. Reduce the heat and simmer for 4-5 minutes, or until chicken is cooked through.
Rosa's Thai founder, Saiphin, suggests...
adding some sweet basil leaves for an authentic aroma, or replacing chicken with tofu and vegetables for a delicious vegetarian alternative. Adding 3-4 drops of fish sauce into the final dish brings out an even deeper Thai flavour.
