Preparation and Usage
1 tbs olive oil
450g chicken thighs, diced
75g spring onions, sliced
275g baby potatoes, cut into thin slices
300ml boiling water
3 Easy Cooking Steps:
1. Pre-heat oven to 200°C, 400°F, Gas mark 6.
2. Heat oil and fry chicken and spring onions, until browned. Transfer to a casserole dish with the potatoes.
3. Mix seasoning with boiling water and add to casserole, stir through and cook for 30 mins, or until the chicken is cooked through and potatoes are tender.
Serve with green beans and an extra squeeze of fresh lemon.
The Real Greek Chef suggests... trying with 2 tins drained chickpeas, and adding a diced carrot and diced celery sticks for a veggie option. Delicious with crusty bread and lemon wedges.

Great dish, easy to make and really enjoyed it.

I followed the instructions closely, and used good quality organic chicken thighs and M&S new potatoes, but the chicken was rubbery and the potatoes were not cooked after 30 mins. After 50 mins I gave up and ate it anyway. Nice taste, but definitely not enough for 4 people. If I were to cook this again I would try it in the slow cooker with whole chicken thighs so that they are tender and fall apart naturally. If you're cooking in the oven you definitely need more liquid and/or a much longer time
Dill
My own fault, did not read the ingredients fully. Absolutely loads of dill in this mix, which I hate. I only realised while in the middle of meal prep, so had to carry on to avoid waste. I used a sieve to remove most of the dill and just about managed to eat the meal. One point I would mention to others is that the recipe water volume does not seem to be quite right. 300ml did not nearly cover the other ingredients in a casserole dish. Dont feel you could cook this for the time recommended with this volume of liquid (I added stock to increase).
