When Siggi Hilmarsson moved from Iceland to New York, he found the yogurt on the shelves far too sweet and missing the simple, satisfying thickness of the skyr he grew up with. So he went back to basics—making small batches of skyr in his own kitchen, guided by the traditions passed down through his family for generations. After plenty of trial and error, he created something delicious, wholesome, and true to his Icelandic roots. Skyr has been part of Icelandic life for over 1,000 years, and Siggi’s family has been enjoying it for decades—his father grew up eating skyr made on his great‑grandmother’s farm in the remote northwest of Iceland. That heritage lives on in every pot of siggi’s: thick, protein‑rich skyr made by straining away the water from skimmed milk, using around three times more milk than regular yogurt.
What began at a small farmers’ market in Manhattan in 2006 has now travelled across the Atlantic once again. Today, siggi’s brings its Icelandic‑style skyr—crafted with simple ingredients and not a lot of sugar—to yogurt lovers in the UK. At siggi’s, we keep things simple. Our plain skyr has no added sugar, and our flavoured varieties are sweetened only with fruit and a touch of cane sugar or agave syrup, resulting in 30% less sugar than the average adult flavoured yogurt in the UK (2025). And of course, we never use artificial sweeteners, preservatives, or colourings.
