History
In 1840 Jean Febvre, a barrel cooper from Montbard, founded the winery which is now Simonnet-Febvre. Today it remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre and Irancy, and remains the only house in Chablis to produce the regional sparkling wine, Crémant de Bourgogne.

Regional information
The Fourchaume vineyard lies on the right bank of the Serein river and covers a thin strip running approximately 2.5km north - south, bordering the northern limits of the town of Chablis. It is one of Chablis' most well known and highly respected premier crus and divided into the sub climats of Vaupulent, Cote de Fontenay, L'Homme Mort and Vaulorent.

Vinification details
This wine was vinified in stainless steel tanks between 18° and 21°C. It was then left to age for 10-12 months in stainless steel, on lees before being bottled.
