All grape varieties are vinified by direct pressing. Cinsault and Tibouren ferment in stainless steel vats, preserving freshness. Grenache and Rolle are partly vinified in tulip-shaped concrete vats, where the natural movement of the lees enhances texture and gives the wine a distinctive roundness and body.
