The date of the harvest was carefully chosen to let mature the grape in a optimal way favoring aromas of ripe (mature) fruits and the aromatic expression. In the wine storehouse: a low-temperature direct pressing with an optimal extraction smoothly. Cold traditional wine making: alcoholic fermentation and breeding.
