CLAUDIO GALOSI

Grapes are soft pressed and the juice is cold settled in stainless steel tanks. Fermentation takes place with selected yeasts at 18°C for 8-10 days. The wine then undergoes a second fermentation using the Charmat method at 14-15°C before cold stabilisation, filtration and bottling.
