Cooking guidelines
Recipe: Serves 2
You will need:
200g large raw prawns, peeled
1 egg, beaten
2 tbsp of oil
1. Soak rice noodles in boiling water with a dash of oil for 8-10 minutes until soft, then drain, rinse in cold water and toss to separate.
2. Heat the oil in a wok or large frying pan, add prawns and stir fry for 2 minutes.
3. Pour in the beaten egg and stir fry for a few seconds until slightly scrambled.
4. Lower the heat, add the noodles and the sauce then stir fry for 2-3 minutes until noodles are hot.
5. Add the sachet of peanuts, shallots and carrots, mix well and serve.
You may substitute prawns with diced chicken or chopped vegetables.
Tip: Add lime wedges and chopped coriander to finish off the dish.

- 1 Red Pepper (sliced), 4-5 Spring Onions (chopped), Handful of Bean Sprouts
