Storage
Keep refrigerated 0°C to +5°C. Consume within 24 hours of opening and by 'use by' date. For 'use by' see front of pack. Suitable for home freezing. If freezing, freeze on day of purchase and use within one month. Defrost thoroughly in a refrigerator before cooking and use within 24 hours. Do not refreeze.
Preparation and Usage
Caution: Not suitable for microwave cooking. Wash hands, surfaces and utensils after touching raw meat. Keep raw meat separate from cooked foods. Vacuum packed for freshness. The colour of the meat will graudally return on opening and there may be a slight odour which will quickly disappear. This is normal and does not affect the eating quality.
This product is raw and must be cooked prior to consumption. This is a guideline only. Remove all packaging. Allow to rest at room temperature for 30 minutes before cooking.
Preheat oven to Electric 240°C / Fan 220°C / Gas 9. Oil and season surface of meat. Place in oven for 20 mins.
Remove joint from oven, add 4 tbsp of water and cover joint loosely with foil. Reduce temperature to 180°C / Fan 160°C / Gas 4 and continue to cook for remaining time:
Rare: 14 minutes per 500g
Medium: 17 minutes per 500g
Well done: 25 minutes per 500g
Baste the joint occasionally during cooking. Remove from oven, cover with foil and rest for 15 mins before carving. For best results, carve thinly and drizzle over juices from roasting tray, or use juices to make a gravy.
Do not reheat.
