It may be a fine line, but to increase pleasure and reduce pain is the aim of The Hedonist. With this in mind, I have let that age old miracle of fermentation occur with the minimum of interference to produce this big buxom red.

I made it black and silky in new American oak and it's got that long velvety finish true Shiraz lovers lust after.

History
A dynamic trio the winemaking team consists of Walter Clappis, veteran winemaker of 31 vintages, daughter, Kimberly and her husban James Cooter. Walters experience and wisdom plus the energy and enthusiasm of the new generation has created the perfect balance in the winery. All the wines reflect a purity which is consistent with the Winemakers and their philosophies.
Regional Information
The fruit for the Hedonist Shiraz is grown biodynamically on own vineyards situated in the Willunga foothills, McLaren Vale. Warm Summer days are cooled by evening sea breezes from St Vincents Gulf, which lies a close proximity to the West. The soil is rich loam over clay with patches of underlying limestone, giving the wine a rich and fullness of pallet.

Vinification Details
After gentle crushing must was pumped into traditional open fermenters with 2x daily pumping over and hand plunging. Fermentation at up to 26ºC ensured optimum extraction of long chain, soft tannins. Approximately 25% of the wine was run off skins to complete fermentation in new French Oak the remainding wine received additional maceration. Finally, the wine was racked off skins into settling tanks then into 50% new French Oak and 50% one year old American Oak for 18 months.

Surprising

I am surprised at all the glowing reviews, but then I guess everyone has a different palate. I bought this wine as I wanted to push the boat out and sample something at a price I don't normally pay. I was surprised at how average this was. It was nice but certainly no notable difference to the £7/£8 I normally pay for red wine, I will be sticking to Casillero Del Diablo in future.

Fabulous

We had this wine on Christmas Day. Everybody loved it and commented on how good it was and wanted to know where we had bought it. It is velvety smooth and tasted deep and rich. It is by far our favourite red at this price and we will definitely buy this again - when it comes back in stock!

An outstanding wine

We've only had 2 bottles of this outstanding Aussie Shiraz, with a gap of a few years between them, but on both occasions we were struck by its depth of fruit flavours and its smoothness. While at 14 percent alcohol it's clearly a powerful wine, its purity of taste and the smoothness of its tannins hide the power very well. On both occasions, we paired it with a Xmas lunch of 30 day dry aged wing rib of sirloin and each time the wine complemented the meal superbly. Well worth trying as a treat.
