We take the finest Scottish, sushi grade salmon and slow cure it in gin and juniper. The slow cure draws out more moisture and leads to a firmer texture and richer flavour. The salmon is then gently smoked over apple, alder and beech chippings, before being left overnight for the flavours to mingle. We then dress with grated lime and grapefruit zest to give it that "tonicy" tang, before vertically slicing by hand in thick, decadent slices.

This was really nice. Good quality fish and a lovely flavour. Its not something wed buy regularly but we cant wait to try another flavour.
Despite the lovely gin & tonic taste, it is too salty for me.
This sounded much more exciting than it tasted. Mistakenly I believed that the price was reflective of quality. It was a good piece of fish but, other than that, there was nothing special about this product.
Great taste. Thicker slice than others, but actually really like the texture. Keep buying it again and again.
Tasted good, slices much too thick
We got this on flash sale, I liked the flavour, texture was nice, not slimy or stringy, but I like thin slices. And these were twice as thick as normal.
