This curry, which has been adapted from my mother's cherished chicken curry recipes, is a beautiful, harmonious sauce which reflects the best of Punjab's gutsy flavours.
It is such a versatile sauce. It can be used as the basis for a large variety of different dishes, so be adventurous with the ingredients you add!

A versatile Indian recipe, delicious with chicken or lamb
Preparation: cut the meat or fish into generous pieces.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds.
2. Add the meat, fish or pulses (if using meat, brown lightly) then add the base. Coat well and cook for 2-3 minutes.
3. Stir in the main sauce and simmer for 3-5 minutes or until the meat is cooked through (30-35 minutes for whole joints).
Serves 2-3 with rice and naan.

Use whole chicken joints for a truly deep, authentic chicken flavour or add good chicken stock.

275g skinned chicken fillets, lamb rump, pork, seafood or paneer
From your cupboard:
1 tsp vegetable or olive oil
for extra heat, simply add the chilli
Preparation: cut the meat, fish or paneer cheese into generous pieces.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively if left whole remove them with a spoon before serving.
