This Southern Pepper Curry combines black pepper, curry leaves and fennel seeds with a harmonious tomato-based sauce that gives this dish a fragrance, punch and provenance that is truly unique.

Peppercorns were once known as "black gold" and were used by traders instead of money. It is still a prized spice and nowhere more so than on India's Malabar Coast.
Perhaps some of the most famous pepper-inspired dishes come from the Chettinads, an old castle of traders from Tamil Nadu and this Southern Pepper Curry is inspired by their spicy flavours.
It is fantastic with all meats as well as seafood. Vegetarians can try it with mushrooms, eggplant and hearty beans.

Bits to buy:
250g skinless, boneless chicken or paneer, seafood, meaty vegetables, lamb, pork, eggs or other
From your cupboard:
1 tsp vegetable or olive oil
For extra heat, simply add the chilli
Recipe
Preparation: cut the meat, fish/seafood, vegetable or paneer cheese into generous pieces.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively if left whole remove them with a spoon before serving.
1. Heat 1 tsp of oil in a small non-stick pan, add spices and cook for 20 seconds
2. Add the fresh ingredients and brown gently before adding the base sauce. Bring to a boil
3. Stir in the main sauce and fish/seafood (if using) and simmer for 3-6 minutes or until the main ingredients are cooked through
Serves 2-3 with naans, rice or roti.
As appliances may vary, these are guidelines only.

Use these handy tips to customise your dish:
- Great with red and white meats as well as most seafood
- Also great with hard-boiled eggs, halved and simmered in the sauce as well as sautéed mushrooms and other meaty vegetables
- Add 1-2 tbs of desiccated or creamed coconut to the curry
- Add a handful of fresh chopped coriander before serving
- For a little extra heat, add some freshly ground coarse black pepper or fry 1-2 whole green chillies in with the meat
