Preparation:
Cut the chicken, pork, or vegetables into generous pieces.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3. Alternatively, if you left the spices whole, remove them with a spoon before serving.
1. Heat 1 tbsp of oil in a small pan, add the spices and cook for 20 seconds then add, diced onion, and cook till soft.
2. Add the chicken, pork, or vegetables, and brown lightly before adding base sauce. Simmer for 2-3 minutes.
3. Add diced peppers and cook till soft and till the protein is cooked through. Then stir in the main sauce and simmer for another 2-3 minutes.
For a restaurant style dish follow these instructions to get a crispy coated chicken:
1. Add the diced chicken to a separate bowl with the base sauce, mix to coat chicken and leave to marinade for 5 minutes.
2. Heat 1 tbsp of oil in a small pan, add spices and cook for 20 seconds. Then add the diced onion and cook for a minute. Add the peppers and then the main sauce and simmer for 2 minutes.
3. Toss the marinated chicken in cornflour and shallow fry in oil until crispy golden brown and cooked through and set aside for a minute.
4. Gently toss the crispy chicken through the hot sauce and serve.
Serves 2-3 with rice, noodles, or prawn crackers. As appliances may vary, these are guidelines only. Cut & save recipe card

275g Skinless, boneless, chicken, pork or vegetables
1/4 Green pepper (chunky dice)
1/4 Red pepper (chunky dice)
1/2 Medium onion (chunky dice)
1 Spring onion (optional)
From your cupboard: 1 Tbsp vegetable or olive oil For restaurant style crispy chicken, you'll also need 200g cornflour
Add thinly sliced spring onions to the final dish for a crisp complimenting finish
