Brought to you by the same farming family that produce the award-winning Copas turkeys every Christmas. Determined to bring flavour back to British flocks the Copas Traditional Turkeys team launched The Thoughtful Producer in 2015.
The team is a motley crew of foodies, poultry pros and farming fanatics who love nothing more than to feed their flocks, both bird and human. They are happiest when they are doing things the thoughtful way which is why, for them, ensuring that their chickens live full and long lives roaming free across rolling meadows is the right thing to do.
This motley crew embrace artisan methods that take time, care and expertise. By slow growing their birds, the Thoughtful Producer ensure that the care and attention they receive in life is reflected in the succulent, rich and memory making flavour.
Expert foragers, cocooned in the heart of the countryside our feathered ladies are not afraid to take on the mighty worm, climb a crate or just let the breeze ruffle their feathers. We like to let nature (and our husbandry team) do all the hard work so that our birds are free to do what birds do best, in their own time. It's not the quickest way to rear chickens, but it's the right way, and for us, it's the only way.

Storage
Keep Refrigerated. For use by date: see label. Once opened use immediately. Suitable for home freezing. Freeze as soon as possible after purchase and within the use by date. Use within 1 month. Defrost thoroughly before use and consume within 24 hours. Do not refreeze if defrosted. Packaged in a protective atmosphere
Cooking guidelines
Our chickens come ready to roast but here are a few pointers to get the most out of your bird
* Preheat oven to 220°C/ 430°F/Gas 8
* Remove chicken from fridge an hour before cooking. Place in roasting tray & season. Insert Pop-Up Timer according to instructions
* Our chickens have a lovely layer of fat so there is no need to add butter or oil
* Pop your herbs into the cavity of the bird, or you could scatter half over the top
* Place in the oven and cook for 20 minutes before reducing oven temperature to 180°C/360°F/Gas 4, cook for approx. 15 minutes per 500g.
* If using foil, remove foil 15 minutes before end to ensure crispy skin
* Remove chicken from oven and allow to rest for 15 minutes
Prepare the chicken in the same way as above and cook for 15 minutes per 500g without the additional 20 minutes at the start.
