Recipe Suggestion - Pulled Jerk Jackfruit (Serves 4)

Ingredients: 2 can Tropical Sun Young Green Jackfruit in Brine, 2 tbsp of Tropical Sun Rapeseed Oil, 1 onion (sliced), 1 1/2 tbsp Tropical Sun Minced Garlic Paste, 1/4 cup Tropical Sun Vegetable Stock, 3/4 cup Tropical Sun Jerk Marinade

Preparation: Preheat oven to 400°F (200°C). Lightly grease a baking tray. Drain and rinse the jackfruit. Use your hands to tear the strands of jackfruit from the harder core. The fruit will come apart very easily. Put the pulled jackfruit into bowl and put the cores into another bowl. Once everything has been pulled apart, use a knife to finely chop the harder cores. Lightly heat the oil in a pan, adding in the onion and garlic - sautéing for 5 mins until lightly browned. Add in the jackfruit and vegetable stock and cook for a further 8-10 mins until soft. Spread on a tray and place in the oven for 15 minutes. Remove from the oven, add the Tropical Sun Jerk Marinade and mix thoroughly so that jackfruit is coated. Put back in the oven and bake until golden brown - for a further 10 mins approx. Remove form the oven and serve topped with coleslaw in a toasted bun.
