Vasterbottensost, with it's aromatic and piquant taste, holds a very special place in Swedish cheese history. The cheese, which was a result of coincidence, has been manufactured in Burtrask in the county of Vasterbotten since 1872.
The myth has it that an attentive suitor distracted dairy maid Eleonora Lindström so much that she forgot about the cauldron standing over the fire, in which she was making cheese. The fire went out time and time again and Eleonora had to keep re-lighting it. This meant that the cheese-making process was prolonged and the cheese was heated up and stirred more times than normal.
Because these were meagre times, the over-cooked cheese was not thrown away but instead put on a shelf and left to its fate. Not until much later did someone think of tasting it. But as soon as it was sampled, people immediately realized how special it was. No one had ever tasted a cheese like it! Strong, aromatic and piquant.
Whether the love story is true or not, we cannot say but some people believe that Eleonora knew very well what she was doing when she created the Vasterbotten cheese.
Either way, we now know that the end result was very successful! Vasterbotten holds a very special place in Swedish cheese history. It has received many awards and is praised by people from all walks of life. It has also been honoured with the title "By appointment to his Majesty the King of Sweden".

The good stuff
A few reviews here comparing to cheddar and parmesan... it's not meant to be either! Should be sliced and put on knäckerbröd, not cooked with!
Excellent Versatile Cheese
Can be grated, melted, sliced. Works by itself or as a topping. Slightly nutty, slightly sharp slightly sweet and as versatile as cheddar or mozzarella.
Jurys our on this one
Had this on sourdough as cheese on toast. Im not sure I like the texture or the flavour. I didnt dislike it, but I didnt love it either. Its got a very distinct flavour and it worked quite well with the generous grind of black and pink pepper I added. I dont think Id pay full price for it. Its not that its particularly expensive, I just dont think the sizeable portion offered is appealing. I will give it another go though.
Excellent for cooking
Melts very well, makes super cheese sauce. Never tried it on toast but should be fine.
bought this on the basis of other reviews did not rate at all
Its tangy, sweet, earthy and a lovely texture & bite, punches above the average cheddar. Sits somewhere between mature cheddar and parmesan but has its own unique style as well.
