Aromatic yeast strains selected. Fruit is harvested from unique sites at optimal ripeness within the Wairau and Awatere Valley's of Marlborough. Fruit is gently destemmed and pressed to stainless steel fermentation vessels. A selection of carefully selected aromatic yeast strains are fermented at cool temperatures to enhance the varietal character. Traditional/Tank Method
