Our dry-aged beef is hung on the bone for a full 30 days. Hanging our beef for as long as we do doesn¿t just tenderise it, it also intensifies the flavour. Making a succulent roasted wing rib all you need before a blustery autumnal stroll. 2.5kg will serve between 6 and 8 people.


Taken from the sirloin, this joint has a large "eye" muscle running through the meat that makes it extremely tender. Marble fats add to the meat's flavour, making it the ultimate roast. Waitrose Aberdeen Angus beef is produced from cattle sired by registered pedigree Aberdeen Angus bulls. The Aberdeen Angus is a native British breed, whose meat is naturally marbled with fat, making it exceptionally tender and full of flavour. We hang the hindquarters on the bone to mature them, to make them more flavoursome and tender, with a almost buttery flavour. 

2.5kg will serve between 6 and 8 people.

Fairly good quality but nothing like the photo

Have to say I was a bit disappointed with this. Don't get me wrong, the quality of meat was fairly good, but apart from the top fat cap, there was barely any marbling at all. It was extremely lean to the point there was almost no 'eye' to the rib. I prepped and cooked it sous-vide for around 8-9 hours so it was very tender and medium rare before searing some serious crust onto it. That was it's only life saver. Probably won't buy this again.

Small Rib of British Beef

Lovely roast beef..cooked it in foil then open for last 20 mins to crisp and brown the fat. The butcher cut it well ..It needs some fat kept on to make it juicy ..and it was very fresh with a good sell by date. Carving ..I removed bone, cut in half and turned on cut side down for slices with a sharp knife as Its small for carving across full joint. It tasted very nice too.

I cooked this with a garlic and herb butter, it was so good with roast potatoes and Yorkshire puddings, everyone enjoyed it, quick fried the rest the next day very good!

delicious!

We really enjoyed this cut of beef. so much flavour and very juicy. I am however a lazy carver and so will probably buy the sirloin joint without the ribs more often. But highly recommend - we sealed it first then cooked as instructed on this page.

Wow this joint was the star of Christmas Dinner.

Absolutely beautiful beef, we served it medium to rare and it was soft, flavoursome & melted in your mouth. This joint was the star of our Christmas dinner, it outshone the Turkey by a mile. Also it made great Beef sandwiches on Boxing Day too. Would definitely buy this again despite being a bit Pricey.

good beef

I love the fat on good beef. I would have prefered the top of the joint left on instead of exposing the bones. We so enjoyed this meal.
