shame its not U.K. sourced
This would have been a 5 star review if the item had been sourced in the U.K. I am not a fan of food miles and try to reduce them. The bird itself is very tasty and of a good quality. I cooked it as the instructions and it was spot on when tested with a thermometer.
I love game birds, so when offered this on flash sale - especially with such positive reviews - I leapt at it. Unfortunately though, despite being gorgeously moist, I found it tasteless even with plenty of sea-salt and freshly ground black pepper. Wish I had just bought a chicken!
Cooked first breast side down, then turned, and roasted with liquid. Tender and delicious.
Tasty, succulent and thoroughly delicious bird
We have just finished a meal with this centre stage - fabulously tasty and succulent meat which I pot roasted with carrot & orange slices, stock, sherry and aromatics (bay, star anise, garlic and ginger) finished off with some Hoisin and soy sauce) just great with rice and green beans and a robust Sauvingon Blanc alongside

Guinea fowl has more fat than chicken and as such cooks faster and is juicier. We are big fans in our house and eat it regularly. We often roast a chicken and a guinea fowl in the same pan to allow the juices of the Guinea fowl mix in and give them a richer, more velvety aspect.
I agree with reviewer below. However I rubbed butter over breasts, seasoned and roasted in oven for suggested time at suggested temperature. I didn't bother up-ending it though, never have... placed in time the right way up. Just leave to its own devices... no basting. Rest uncovered 10 mins. Makes for a moist tasty guinea fowl with crispy skin. Yum
