Makes a VeryTasty Malted Seeded Loaf
My household liked this bread flour mix. The loaf rose well with a good crust and was very tasty. I used a good quality breadmaker and followed the Wessex instructions to use the rapidbake function. (An initial overnight standard loaf setting resulted in a partially sunken loaf which was also too crusty.) However I do prefer the Marriage's Malted Seeded Bread Flour Mix which has 15% seeds and is also a little bit lighter. Normally I bake using my own recipe of three types of flour and four types of seeds, but this pre-mixed flour and seed mix is pretty good. The Wessex mix would probably benefit from using golden linseed rather than brown and and a larger size of millet.
