Wholegood sources organic produce from farmers that care about the soil they grow in as much as the flavour it produces. It's not aesthetically perfect, exteriors can sometimes be blemished and shaped a bit wonky, but this does not compromise flavour.


Our aubergines are relatively firm but with a little give along their meatier sections. Generally covered in glossy deep purple skin with the possibility of a little scarring from weather and travel. Aubergines can be unforeseeably bitter sometimes due to naturally occurring compounds in their skin and seeds - ours are no different. Removing any visible seeds or salting the aubergine work efficiently as way to overcome that bitterness. Cube your aubergine and sprinkle generously with salt. Let it sit for at least an hour (or longer) to draw out the moisture and bitterness. Rinse the salt off and pat the pieces dry before cooking.

Preparation and Usage


As an ingredient, aubergines are incredibly versatile and soak in tons of flavour – making them popular in stews, hearty dips or dishes with a little gravy. Their flesh being mild and subtly flavoured is dense, firm but spongy when raw, and turns tender and creamy when cooked. An 80g serving of aubergine will count towards your 5 a day.
For a quick dish, cube, minimally salt, and gently coat with oil. Then roast them in the oven for about 20-25 minutes. While you wait, prepare an East Asian inspired sauce of miso, toasted sesame oil, honey, vinegar, soy, garlic paste and chilli – a great marinade to drench the cooked aubergine in, which can then be plated with a generous heap of finely sliced shallots, and served with jasmine rice to be enjoyed as a meal.
