Preparation and Usage
| Rhubarb has a signature tart flavour that is popularly cooked with sugar for dessert preparations. Make sure to wash the rhubarb stalks and cut off the leaves near the base. Check the stalks for any blemishes and use a vegetable peeler to remove them. Once prepped, cut the stalk into smaller chunks and poach in sugar water with spices like vanilla, star anise and pink peppercorn. Pierce with a knife to check once they are adequately soft. When they are ready, place on a plate to cool while you toast a crusty slice of bread. Smear the toast with a mild soft cheese and place the poached spiced rhubarb on top to enjoy as a delicious canape. |
