Vinification details

Harvesting is performed at optimum ripeness at night or early morning when the cool temperatures help to preserve the fruit's potential. The grapes are fully
destemmed, then cooled down before being put in vats for several days, a process of cold maceration reserved for great wines to bring out the typicity of this excellent variety. Fermentation is performed in contact with oak wood for a few days.
