Mapo is the dish that defines Sichuan cooking: deep savoury heat with the signature mala tingle. We build ours on Pixian douban, the fermented broad bean paste from Sichuan's chilli heartland, with fermented black beans, chilli flakes and whole Sichuan pepper.
