Preparation and Usage
1 Wash 250g Yutaka Sushi Rice with cold water, stirring in a circle with your hand. Drain and repeat until water is clear, then soak in cold water for 15-30 minutes before draining it thoroughly. Soaking allows the rice to absorb water right to the centre of each grain for even cooking.
2 Add the washed rice to 330ml fresh cold water and bring to the boil. Then simmer on a low heat for 10 minutes with the lid on.
3 Turn off the heat and leave to stand for 10 minutes with the lid on before serving.
In Japan, we always use a wooden spoon and bowl to prepare cooked rice. It's because metal spoons can damage the soft, tender grains, and may also react to the vinegar used to season authentic sushi rice.
How to create perfectly seasoned Sushi Rice
1 Cook 250g Yutaka sushi rice according to the instructions
2 Prepare sushi seasoning by mixing 3 tbsp Yutaka Japanese rice vinegar, 2 tbsp sugar and 1 tsp salt. Or simply use 3 tbsp of ready-mixed Yutaka sushi seasoning.
3 Wet the surface of a mixing bowl, ideally a wooden one. Transfer rice to the bowl and fold the sushi seasoning into the rice while it's still warm using a wooden spatula. To mix, gently cut through the rice with the spatula horizontally, working from the top, not stirring to avoid breaking the grains.
4 Cool the rice at room temperature covered with a damp cloth. Start making your roll when the rice gets close to body temperature - this makes it easier to shape than cold rice, and brings the flavours of your sushi toppings to life.

Used to be great, now it's awful.
We've been buying this rice for years and it's always been great. However recently the rice has changed, it's like risotto rice now and has NO stickiness whatsoever. You can't make sushi out of it at all as the grains don't stick together, the rolls just fall apart. Really disappointed, used to love this brand, now it's not fit for purpose.
Not sushi rice, may not come from Italy
No resemblance to sushi rice whatsoever. I am from Japan and have tried every brand of sushi rice available in UK but this was the first time I felt the need to leave a review. I cannot believe this product is sold as sushi rice. Nothing like other Japanese style rice grown in Italy or USA Ocado listing says Country of Origin Italy Box says Packed in Italy Rice may not come from Italy If this was stated correctly, I couldve avoided purchasing this.
its not sushi rice.
I totally agree with another review, this is not sushi rice, its not sticky at all, its not easy to handle, its texture would be fine for a rice salad, not for sushi. Ive just cut my uramaki and it was a complete disaster!
It is NOT sushi rice
I am Japanese and I usually order 10kg yumenishiki or other brands from the Japanese grocery store, but they were out of stock so I tried this rice. In short, this is not Sushi rice or Japanese rice!!!! The texture is so wrong. Almost like quinoa or bulgur wheat and you can't make sushi as they crumble and doesn't work with any Japanese dishes. Avoid this rice if you know what Japanese rice is!
Amazing Sushi Rice
I really wanted to try and make perfect sushi rice as it just tastes amazing if you cook it right. I followed the instructions and there were no problems making perfect sushi rice. Make sure you don't put too much water, wash and rest the rice after cooking, add some sushi seasoning, and you can't go wrong!
Best Japanese rice
Love this rice! You must follow the washing & cooking instructions and will have the best sushi rice. It has light nutty flavour & great texture. I use it to make sushi & even sometimes with my Indian curries (as it soaks up the curry nicely)
