Recipes

For that genuine ramen restaurant experience add seasoned minced pork for an extra layer of flavour.
Here's how to make it!
Seasoned Minced Pork
(or alternatively mushrooms/tofu)
170g minced pork
1 knob ginger, grated
2 cloves garlic, minced
1 tbsp cooking sake
1 tbsp chilli bean paste
2 tsp soy sauce
1 Heat a medium saucepan over medium heat. When the saucepan is hot, add 1 tbsp cooking oil, then add the pork mince.
2 Cook the pork, stirring frequently, until it's no longer pink. When it's almost done cooking. add 1 tbsp sake (alternatively shaoxing wine or dry sherry) and stir to combine.
Tip: Sake helps remove the unwanted odour from the pork.
3 Add the grated ginger with juice and the minced garlic and stir to combine.
4 Add 1 tbsp chilli bean paste (doubanjiang) and 2 tsp soy sauce and stir to mix.
5 Lower the heat to medium low and let the pork mixture simmer until the cooking liquid is almost evaporated, for about 2-3 minutes. Then, turn off the heat.
6 To serve, add pork mixture on top of the noodles and place blanched pak choi to garnish.
