Zero Regrets

The grapes are destemmed and very gently pressed in a pneumatic press. Before fermentation, the juice is chilled and racked after settling. Selected yeasts are added to initiate the alcoholic fermentation, which takes place in temperature-controlled stainless steel tanks at 13°C. Vacuum distillation occurs at around 30°C to preserve the vibrant aromas and flavours.
